quotes from the WA big game reg booklet

Forest grouse & unclassified wildlife (including coyote) may be hunted with either a small game license or a big game license.

Statewide, open year round
If hounds are used, season is:
Sept. 2, 2008 - Mar. 15, 2009
(Except year round with hounds in Adams,
Benton, Franklin, & Grant counties)

Bobcat, raccoon, and coyote may be hunted at night during established bobcat and raccoon seasons, EXCEPT that: it is unlawful to hunt any
wildlife at night or wild animals with dogs (hounds) during the months of September, October, or November in any area open to a centerfire rifle
deer or elk season.

Cool. One of my customers has invited me--on several occasions--to go shoot coyote with him. I just may take him up on it.

Any rifle recommendations?

I hunt Coyotes. either a .223 Contender or a .308 Cloward Express XP101
Adds a little challenge.

.204, 22-250, 222, 220swift, 223 all are good roungs amongst a few others.

308 overkill if you are keeping fur not worth the time.
